Thermal conductivity measures how quickly a pan responds when you raise or lower the flame. A highly conductive pan adjusts almost instantly. A poorly conductive one holds onto old temperatures, creating hot spots and uneven cooking.
Here is how common cookware metals compare:

Carbon Steel Cookware: The Chef's Secret Weapon and the M'Steel Line
Carbon steel has been a staple of French professional kitchens for hundreds of years. Chefs call their carbon steel pans "black steel" or "blue steel," and they reach for them every time they need a blistering sear, a perfect crepe, or a properly rolled omelet. Home cooks are now discovering what professionals have known all along.
Our M'Steel line is composed of 99% iron and 1% carbon, making it compositionally closer to cast iron than stainless steel, but at roughly half the weight. At 3.2mm thick (10 gauge), M'Steel is thicker than many competitors, which contributes to better heat retention and strong resistance to warping.
Carbon steel excels at crepes, omelets, wok stir-fry, high-heat searing, and any dish requiring frequent tossing or stovetop-to-oven transitions. Its temperature ceiling of 1,200°F makes it safe for open-flame cooking, grilling, and the most aggressive searing applications you can put it through.
The seasoning story is part of the appeal. With use, carbon steel develops a natural patina that becomes increasingly non-stick over time. There is a learning curve, particularly for crepes and omelets, but the payoff is a cooking surface that improves with every meal.
One important limitation: carbon steel reacts with acidic foods. Prolonged simmering of tomato sauce, wine reductions, or citrus-based liquids can strip the seasoning you have built. Keep acidic cooking in stainless steel.
