This glossary defines the key terms you will encounter when choosing, using, and caring for handcrafted copper and multi-ply cookware. It is written for home cooks and professionals alike who want to understand the materials, construction methods, and traditions behind every piece.
- 18/10 Stainless Steel
- A stainless steel alloy containing approximately 18% chromium and 10% nickel. This composition resists corrosion and does not react with acidic foods, which is why it is used for interior linings and rivets in premium copper cookware. When you see "18/10" in a product specification, it signals a high-grade steel chosen for durability and food safety.
- 5-Ply Construction
- A cookware wall built from five bonded layers, typically an 18/10 stainless steel cooking surface, three aluminum alloy cores for heat distribution, and a ferritic stainless steel exterior for induction compatibility. The multiple layers work together to spread heat evenly while keeping the pan responsive to temperature changes. This construction is the basis of lines like M'Cook CI.
- Anodized Aluminum
- Aluminum that has been electrochemically treated to form a hard, non-porous oxide layer on its surface. The anodizing process makes the metal more scratch-resistant and less reactive than raw aluminum, providing a durable base for non-stick cookware. In a copper-focused catalog, anodized aluminum pieces offer a lighter-weight alternative for everyday cooking tasks.
- Bassine à Confiture (Preserving Pan / Jam Pan)
- A wide, shallow, unlined copper pan traditionally used in France for making jams, jellies, and preserves. The broad surface area encourages rapid evaporation, while copper's superior heat conduction helps sugar reach the setting point quickly and evenly. Because the high sugar content of preserves limits copper reactivity, these pans are intentionally left unlined.
- Batterie de Cuisine
- The French term for a complete set of cookware, encompassing every pot, pan, and specialty piece a kitchen needs. A well-planned batterie de cuisine typically includes saucepans, sauté pans, stockpots, and roasting vessels in graduated sizes. The concept reflects the French culinary philosophy that each cooking task deserves a purpose-built tool.
- Beeswax Coating
- A thin protective layer of natural beeswax applied to carbon steel cookware before it leaves the factory. The coating prevents rust and oxidation during shipping and storage. Buyers must remove it completely, usually by washing with hot soapy water, before seasoning and first use.
- Bilaminated (Bi-Metal) Construction
- A manufacturing method in which two different metals are permanently bonded into a single sheet before being shaped into cookware. In copper cookware, this typically means a thick copper exterior fused to a thin stainless steel interior. The result combines copper's outstanding heat conduction with a non-reactive cooking surface.
- Brass Handle
- A handle cast from solid brass, offering the most traditional aesthetic in French copper cookware. Brass handles develop a warm patina over time and are a hallmark of heritage-style pieces. Because brass conducts heat, a dry towel or handle cover is recommended when cooking on the stovetop.
- Carbon Steel (Black Carbon Steel)
- A steel alloy with a higher carbon content than stainless steel, prized for its ability to develop a natural non-stick surface through seasoning. Black carbon steel pans are typically 2 to 2.5 mm thick, giving them quick heat response and excellent searing performance. They require regular seasoning and should be dried promptly to prevent rust.
- Cast Iron Handle
- A handle made from cast iron, commonly found on professional-grade French copper cookware. Cast iron handles are oven-safe and extremely durable, making them a practical choice for dishes that move from stovetop to oven. Their dark finish provides a visual contrast against polished copper exteriors.
- Cast Stainless Steel Handle
- A handle cast from solid stainless steel, offering a modern look and low-maintenance durability. Unlike brass or cast iron, stainless steel handles will not tarnish or require seasoning. They are a popular choice for cooks who prefer a contemporary aesthetic on their copper pieces.
- Copper Reactivity (with Acidic Foods)
- The chemical tendency of bare copper to react with acidic ingredients such as tomatoes, citrus, and vinegar, releasing copper ions into the food. In small amounts this is harmless, but prolonged contact can affect flavor and, in excess, pose health concerns. This is the primary reason most copper cookware is lined with tin or stainless steel.
- Ferritic Stainless Steel
- A type of stainless steel that is magnetic, unlike the more common austenitic (18/10) grades. In multi-ply cookware, a ferritic stainless steel outer layer allows the pan to work on induction cooktops, which require a magnetic surface to generate heat. It also adds structural rigidity to the layered construction.
- Gauge (Wall Thickness)
- The thickness of a cookware wall, measured in millimeters for copper pieces. Thicker copper (for example, 2.0 mm versus 1.5 mm) stores more heat and provides more even temperature distribution, but adds weight and cost. Wall thickness is one of the most important specifications to compare when selecting copper cookware.
- Hammered Finish
- A surface texture created by striking the copper with a hammer, either by hand or machine, leaving a pattern of small, overlapping indentations. Beyond its distinctive appearance, hammering was historically used to work-harden the metal and improve its structural strength. Today it remains a signature of artisan coppersmithing traditions rooted in Villedieu-les-Poêles.
- Heat Responsiveness
- The speed at which cookware changes temperature when you adjust the burner. Copper is exceptionally heat-responsive, heating up and cooling down far faster than cast iron or stainless steel. This quality gives cooks precise, real-time control over cooking temperature, which is especially valuable for delicate sauces and sugar work.
- Induction Compatibility
- The ability of a pan to work on an induction cooktop, which uses electromagnetic energy to heat only magnetic materials. Pure copper and aluminum are not magnetic, so they will not heat on induction burners without modification. Solutions include multi-ply construction with a ferritic stainless steel base or a separate induction interface disc placed between the burner and the pan.
- Induction Interface Disc
- A flat, magnetic metal plate placed on an induction cooktop beneath non-magnetic cookware such as copper or aluminum pans. The disc heats up via the induction element and transfers that heat to the pan above it. While it adds a step, it allows cooks to use traditional copper pieces on modern induction stovetops.
- Patina
- The gradual darkening and color change that develops on the surface of carbon steel or copper cookware through regular use. On carbon steel, a well-built patina acts as a natural non-stick layer that improves with every cook. On copper exteriors, patina is an aesthetic change that some cooks embrace and others polish away; neither choice affects cooking performance.
- Pouring Rim
- A subtle flared lip along the edge of a pan or saucepan, designed to channel liquids cleanly when you pour. A well-formed pouring rim prevents drips from running down the side of the vessel. It is a small but practical detail that distinguishes thoughtfully designed cookware.
- Retinning
- The process of stripping a worn tin lining from a copper pan and applying a fresh coat of molten tin. Over years of use, tin linings thin and eventually expose the copper beneath, at which point retinning restores the pan to safe, full performance. Skilled retinners hand-wipe the molten tin across the interior, a craft that has changed little in centuries.
- Rondeau (Brazier)
- A wide, relatively shallow pan with straight sides and two loop handles, designed for braising, reducing sauces, and browning large batches. Its broad cooking surface maximizes contact with heat, while the low profile makes it easy to move in and out of the oven. The rondeau is a staple of the professional French kitchen.
- Sauteuse
- A wide pan with gently curved sides, used for sautéing, tossing ingredients, and reducing sauces. The curved walls make it easy to flip food with a flick of the wrist and to whisk sauces without catching in sharp corners. It is a foundational piece in any French batterie de cuisine.
- Seasoning
- The process of building a thin, polymerized oil layer on the surface of carbon steel or cast iron cookware. Seasoning creates a natural non-stick coating that improves with repeated use. New carbon steel pans must be seasoned before their first cook, typically by heating a thin film of oil until it bonds to the metal.
- Stainless Steel Lining
- A thin interior layer of stainless steel bonded to the copper body of a pan. Unlike tin, stainless steel will not wear away or melt at high temperatures, so it never needs re-lining. It provides a durable, non-reactive cooking surface, though it does not release food quite as easily as a well-maintained tin lining.
- Thermal Conductivity
- A measure of how efficiently a material transfers heat, expressed in watts per meter-kelvin (W/m·K). Copper scores roughly 385 W/m·K, far above stainless steel (around 16 W/m·K) and aluminum (roughly 205 W/m·K). This exceptional conductivity is the core reason copper cookware heats so evenly and responds so quickly to temperature adjustments.
- Tin Lining
- The traditional interior coating of copper cookware, applied by hand as a thin layer of molten tin wiped across the heated copper surface. Tin is naturally non-stick when properly cared for and does not react with food. It is softer than stainless steel and will eventually wear through with use, requiring periodic retinning to maintain food safety.
- Verdigris
- The green or blue-green patina that forms when copper oxidizes in the presence of moisture, air, or acidic substances. On cookware, verdigris can appear on unlined copper surfaces or neglected exteriors. It should be promptly removed with a mixture of vinegar and salt, as ingesting copper oxide compounds is not safe.
- Villedieu-les-Poêles
- A small town in Normandy, France, renowned as the historic capital of French coppersmithing. Artisans have worked copper here since the Middle Ages, and the town still holds the official "Ville et Métiers d'Art" designation for its craft heritage.
