"Induction: with interface disc" means the pan works on an induction cooktop when used with the Mauviel M'PLUS magnetic interface disc. Thickness is the total wall thickness. M'Heritage pans are copper with a stainless steel lining; M'3 S is 2.5 mm in total, of which the copper layer is 0.5 mm. Specifications are from our product pages and factory documentation; always check the individual product page for sizes and details.
Copper thickness: M'150, M'200 and M'250
All three M'Heritage thicknesses use the same bilaminated construction: a copper exterior bonded to an 18/10 stainless steel interior, roughly 90% copper and 10% stainless. What changes is the total wall thickness (copper plus stainless lining), and with it the amount of copper. M'150 is 1.5 mm, M'200 is 2.0 mm and M'250 is 2.5 mm. The more copper, the better the heat conductivity: heat spreads faster and more evenly across the base and up the sides, so M'250 performs best, while M'150 is the lightest to handle. The letter after the number tells you the handle: B is brass, S is cast stainless steel.
Who each line is for
M'Heritage M'150 B and M'150 S
Choose it if you want real copper in the lighter 1.5 mm gauge, with traditional brass handles (B) or stay-cool stainless handles (S).
Think twice if you cook on induction without a disc, or you want the best heat conductivity (look at M'200 or M'250, which have more copper).
M'Heritage M'200 B
Choose it if you want more copper than M'150 for better heat conductivity and steadier heat, at a weight that still suits everyday cooking.
Think twice if you prefer a lighter pan to lift and toss.
M'Heritage M'250 B
Choose it if you want our thickest Heritage copper, at 2.5 mm. The most copper means the best heat conductivity in the range.
Think twice if weight matters to you, or you cook on induction without a disc.
M'3 S
Choose it if you want a polished copper exterior over an aluminum core and a stainless interior, in a 2.5 mm body with a 0.5 mm copper layer.
Think twice if you want the thicker copper of the M'Heritage lines, or native induction (look at M'6S).
M'6S
Choose it if you have an induction cooktop and still want copper. It is built with six layers so it works without a disc.
Think twice if you want a traditional all-copper feel, since the body includes aluminum and magnetic steel layers.
M'Tradition
Choose it if you want hand-made, tin-lined French specialty pieces for gentle, even cooking.
Think twice if you cook at high heat. Tinned copper should stay under 440°F. On induction, use the interface disc.
M'Cook and M'Cook B
Choose it if you want one dependable 5-ply stainless set for every cooktop. Oven and broiler safe. M'Cook has stainless handles; M'Cook B has brass.
Think twice if you want a hammered finish (see M'Elite) or a dishwasher-safe line.
M'Elite and M'Elite B
Choose it if you want the same 5-ply performance with a polished, hammered exterior. M'Elite has riveted stainless handles; M'Elite B has brass.
Think twice if you want a dishwasher-safe line.
M'Urban 4 and M'360
Choose it if you want 2.0 mm tri-ply stainless that is dishwasher safe and induction ready. M'360 adds a glass lid and is a limited line, available while supplies last.
Think twice if you want the extra thickness and heat distribution of 5-ply.
M'Steel
Choose it if you want a carbon steel pan for searing and browning that builds its own nonstick surface over time.
Think twice if you simmer a lot, or don't want to season and dry your pan after each use.
Induction, explained
Induction cooktops need magnetic cookware. Lines built for induction in our range are M'6S, M'Cook, M'Cook B, M'Elite B, M'Elite, M'Urban 4, M'360 and M'Steel. The M'Heritage copper lines, M'3 S and M'Tradition work on induction when used with Mauviel's magnetic interface disc. For more detail, read our Induction Cookware Guide.
Frequently asked questions
Does Mauviel copper cookware work on induction?
Yes, in two ways. M'6S is a six-layer copper line built to work directly on induction cooktops. The M'Heritage copper lines (M'150, M'200, M'250), M'3 S and M'Tradition work on induction when used with Mauviel's magnetic interface disc.
Where is Mauviel cookware made?
Every Mauviel 1830 line compared on this page is made in Normandy, France, where Mauviel has been making cookware since 1830.
What is the difference between M'150, M'200 and M'250?
Total wall thickness, and with it the amount of copper. M'150 is 1.5 mm, M'200 is 2.0 mm and M'250 is 2.5 mm. The more copper, the better the heat conductivity, so M'250 heats most evenly and M'150 is the lightest. All three use the same copper and 18/10 stainless steel construction. B means brass handles and S means cast stainless steel handles.
Is Mauviel copper lined with tin or stainless steel?
Almost all of our copper lines are lined with 18/10 stainless steel. Only M'Tradition is tin-lined. Tinned copper should not be used above 440°F, because tin begins to melt at about 445°F.
What is the difference between M'Cook and M'Elite?
Both are 2.6 mm, 5-ply stainless steel and both work on induction. M'Cook has a polished exterior; M'Elite has a polished and hammered exterior. Each also comes in a "B" version with brass handles.
Which Mauviel cookware is dishwasher safe?
M'Urban 4 and M'360 are dishwasher safe. Our other lines are best washed by hand, and carbon steel in particular should be dried right away and lightly oiled.
How hot should I run my Mauviel pans?
Lower than you might think. Mauviel cookware conducts heat so well that cooktop controls should not be used at full power. Aim for about 60% of maximum, which is level 6 on a 10-point dial.
Is Mauviel cookware oven safe?
Yes. M'Cook and M'Elite are oven and broiler safe, and M'Steel is oven safe up to 680°F. Tin-lined M'Tradition pieces should stay under 440°F. Check each product page for details on lids and handles.
What does "5-ply" or "tri-ply" mean?
Ply is the number of bonded metal layers in the pan wall. Tri-ply pans have three layers, 5-ply pans have five, and M'6S has six. More layers usually means a thicker, more evenly heating pan.
Do I need to season carbon steel?
Yes. M'Steel ships with a beeswax coating to prevent rust. Wash it off with very hot water, then season the pan by heating a thin layer of flavorless oil, letting it cool, and wiping it clean. Repeat once. The surface darkens and becomes naturally nonstick with use.
