Frequently asked questions

Which Mauviel cookware line should I buy?

Start with your cooktop and the material you want. For copper on gas, electric or halogen, choose M'Heritage: M'150 is the lightest, M'200 and M'250 have more copper for better heat conductivity. For copper on induction, choose M'6S. For everyday stainless steel that works on every cooktop, choose M'Cook or the hammered M'Elite. For dishwasher-safe stainless, choose M'Urban 4. For searing, choose M'Steel carbon steel. See every line side by side on our comparison page.

Copper or stainless steel: which is better?

Copper heats quickly and evenly and responds fast when you turn the heat up or down, which is why chefs use it for sauces and delicate cooking. It needs hand washing and occasional polishing. Multi-ply stainless steel is lower maintenance, works on induction, and still spreads heat well thanks to its aluminum core. Many cooks own both.

Which Mauviel cookware works on induction?

M'6S, M'Cook, M'Cook B, M'Elite, M'Elite B, M'Urban 4, M'360 and M'Steel work directly on induction. The M'Heritage copper lines (M'150, M'200, M'250), M'3 S and M'Tradition work on induction with the Mauviel M'PLUS magnetic interface disc. Read more in our Induction Cookware Guide.

Where is Mauviel cookware made?

Mauviel has made cookware in Villedieu-les-Poêles, Normandy, France, since 1830.

Does Mauviel cookware have a warranty?

Yes. Mauviel cookware bought from Mauviel USA is covered by a Limited Lifetime Warranty.

What do the letters B and S mean in Mauviel line names?

They describe the handle. B means brass handles and S means cast stainless steel handles. For example, M'Heritage M'150 B has brass handles and M'150 S has cast stainless steel handles. The number (150, 200, 250) is the total wall thickness in hundredths of a millimeter: 1.5, 2.0 or 2.5 mm.

How hot should I cook with Mauviel pans?

Lower than you may expect. Mauviel cookware conducts heat so well that you should not use full power. Aim for about 60% of your cooktop's maximum, which is level 6 on a 10-point dial. Tin-lined M'Tradition pieces should stay below 440°F.

How do I keep copper cookware shiny?

Wash copper by hand, dry it right away, and polish the exterior when you want to restore the shine. A dedicated copper cleaner such as Mauviel Copperbrill makes this quick. Some cooks prefer the darker patina copper develops over time; it does not affect cooking.
